Kolaci are a massive variety of small, bite-sized, extremely tasty cakes. If you are on a diet you might decide to put it on hold for the day as these cakes are completely irresistible!
Kolaci are a traditional feature of every Croatian wedding and are bought in abundance! They are laid out for guests from the moment the dinner starts, replenished throughout the celebration and at the evenings end all that are left - and there are lots! - are divided up among the guests and given as a present.
They are made from organic ingredients, nuts, fruits, berries, creams, chocolate, coconut, jams, sponges, marzipan and every other ingredient combination possible without any artificial flavours, sweeteners or colours. They are always made and decorated by hand and take a lot of effort and dedication.
Traditionally the women of the families would make the cakes to bring to the celebration which results in a huge abundance of the small delicious cakes. Nowadays a caterer, bakery or a few ladies in the village would specialise in making Kolaci.
Kolaci don't only taste amazing, they look fabulous! The Kolaci makers would usually decoratively lay the cakes on large trays, sometimes piling them one atop the other into pyramids, and place the trays near the entrance to make a bountiful display, pile an assortment on every table and continually replenish them as the celebrants naturally devour the delicious heap.
